A hot walk from Thurlbear to Bickenhall passes two honesty tables. I buy a cucumber to carry home. Then mint and parsley, 20p a bunch, to bring home too. Later I make a salad, ingesting the green.
A salad with a cool refreshing flavour
Cucumber 1
Garlic cloves 2
Natural yoghurt ½ pt (284ml)
Fresh mint, chopped 1 tbspn (15ml)
Parsley, chopped 1 tbspn (15ml)
Salt to taste
Paprika to taste
Dice the cucumber and crush the garlic cloves. Combine the garlic, yoghurt, mint and parsley and add the cucumber. Season to taste with salt and paprika
